Pascal had been an ice cream maker and restaurateur in Montmartre for 25 years when his project to produce Fine French craftsman Biscuits came to fruition in 2010.
Why have a Biscuit Shop in Montmartre?
P.V. : Well, Montmartre is not known for these specialist biscuits nowadays. However, several Biscuit factories were established in the area in times gone by. Few people are aware that from the 16th century until around 1850, there was a fairly large quantity of flour produced here, with nearly 14 windmills, not counting those that were on the plain. I think that from this point of view our firm has every reason to defend the legitimacy of its establishment.
What does Montmartre mean to you?
P.V. : I would say that above all, it’s the atmosphere that makes it a place that time forgot. You know, when you walk around Montmartre, you always get the impression that you are seeing a bygone world: that inspires you with a certain romantic nostalgia… even today, there is a sort of peace here – the little streets still have a village atmosphere, which was what Montmartre was right up to the 19th century.
How do you choose your recipes, your ingredients?
P.V. : With passion and a great deal of care! As for recipes, the search always starts with a quest for elegance, and as for ingredients, of course they’re quality. To make an authentic, fine biscuit in the traditional, French style, you don’t improvise: all our specialities are the result of expert knowledge.
